Classic Chocolate Cake

Get your chocolate fix with this strikingly simple chocolate cake.

Who doesn’t love cake? This is a great basic cake recipe that everyone should know. I remember the first time I made a cake, my mum helped but didn't know what to do when the eggs curdled, so we rang my dad (who was at work) and badgered him to instruct us remotely. That cake turned out well and ever since I've remembered the mantra four, four, four, and two (4oz sugar, 4oz butter, 4oz self-raising flour and 2 eggs)  or six, six, six, and three (6oz sugar, 6oz butter, 6oz self-raising flour and 3 eggs) for a sandwich cake, ever since and it has proved invaluable when a cake is needed in short order.

Topping the cake with a simple ganache elevates a simple cake to a whole new level and will impress anyone.

New And Improved

I've been umming and ahhing about uploading this recipe for ages as it already exists in a different form on my blog. It's this Spanish omelette recipe from September 2014. I finally decided to post it in part because of the improved photography and in part because I think this recipe is better as I've been able to tweak it over the intervening 20 months.

There's more butter and salt involved and this omelette cooks slower and for longer, it will probably take 45 minutes to make properly and serves two.

School's Out For The Summer!

I'm a cook!!
I have a job! And a flat in France! And it's summer! And Very Hot! As you can probably tell, I'm excited and busy. First things first, I am moving to Poitiers in September for a year, as you may already know, and I went there with mum a couple of weeks ago to find somewhere to live. Well, we expected it to be really difficult but by some miracle we loved the first flat we saw and got that one. It's lovely and spacious and right in the centre of town. The weather on the weekend we were there was gorgeous, and there were some amazing markets that are on every day/week so I won't be short of ingredients for new recipes to share with you. You can see in the photo below what it was like.

Hi And Bye: A Very Quick Recipe

Argh!!! Exam season is upon me and I have only got a week before a major deadline AND my French speaking exam. Scarily, in a month's time I shall have finished my exams AND be half way through my degree *cue manic nail biting terror*. This means that my recipes will be uploaded somewhat erratically as it will be a nightmare few weeks but I do have a few posts up my sleeve for you pre-written to avoid me stressing out too much. On a brighter note, I got 67 in my last essay, which is worth 40% of one module's final mark - for those of you who aren't familiar with university marking - one teacher said she'd only ever given 80 once before and that was because she couldn't have sat down and written a better essay herself. 67 is equivalent to a high 2:1, which is great. I also had a presentation to do on Wednesday, so hopefully that went well, I think it did but I won't get the mark for a few weeks.

Fajitas

I've been struck down by fresher's flu (despite no longer being freshers) so my cooking and blog writing has suffered a bit. I'm now well again and raring to cook some more. So far so good on that front: this week I've made scotch eggs, pasta, 4 batches of brownies, fajitas and tortilla española. In making all of that I have used up two dozen eggs! The meal I'm telling you about today is the only one that doesn't contain any eggs.

I'm not going to say that there's a recipe to make fajitas because there isn't, not really. Just choose the options on the list that you want, cook the chicken/quorn in the fajita seasoning mix and the relevant veg then place everything in bowls on the table. Voilà, one fun meal for everyone to enjoy. The photos were taken by Sarah, who stood on a chair, announcing she felt tall, in order to take some of the pictures.

Fajita "recipe"
Take your pick as which bits you want.
Put the tortillas in the microwave according to the instructions on the pack (normally about 30 seconds for 4).
I tend to serve two tortillas per person, heating the second ones as everyone finishes their last mouthfuls of the first.

Ingredients
Chicken (one small breast per person) or quorn (especially for Grace!) to the same amount as the chicken.
Fajita spice mix (mine's from Barts and I got it at Waitrose)
Shredded lettuce
Hot and/or cold sweetcorn (my sister will only eat it cold, ick!)
Salsa (Tracklemore do nice ones - I found it really difficult to find salsa in the small supermarkets near me and wound up buying mine in a cheese shop in Didsbury)
Chipotle sauce (Changos in Manchester does the best and they now sell it in store)
Grated cheddar cheese
Tortilla wraps
Mushrooms sliced and fried in butter
Melted red peppers and onions (2 of each plus butter)

the peppers and onions beginning to melt down

Method
Cook 2 red peppers and 2 onions, cut into long strips, in about 50-100g of butter over a low heat for 30 minutes, keep the lid on and stir occasionally, adding more butter if needed.
Cook the chicken/quorn in butter and add the seasoning to taste.
Heat/cut the rest of the ingredients as you wish and place in bowls.
Heat the tortillas in the microwave for 30 seconds.
Remind everyone that there's got to be enough for another round and tuck in!

What do you put in your fajitas?
