I used to make this dish for my family when I was younger and recently revived it for my 22nd birthday (have I mentioned I'm 22 enough recently?!). It's a straightforward meal that is perfect for dinner parties as the prep can all be done in advance. Just make them up until the point you have to cook them in the oven and put them in the fridge instead. Shove them in the oven 30 minutes before you want to eat and enjoy a drink and nibbles with your guests.
I love the idea of effortless dinner parties and yet never succeed. One eye fully made up and frantically stirring a sauce with one hand while laying the table with the other. My friends find it hysterical, and my parents ask why I don't do dishes where everything is prepared well in advance. I suppose I like the challenge, but also I seem to have no concept of timing, and consequently run late for everything.

Birthday Dessert
I turned 22 on the 26th of December and was sick of cakes after a spate of birthdays recently. Initially I decided to have a birthday starter instead (of cheese soufflé) but one of my friends posting a photo of some caramel that she was making swayed me in favour of homemade vanilla ice cream drizzled with salted caramel (my current, and long-lasting, weakness - last year's cake was a set of salted caramel fondants). Previously I've always bought in my salted caramel sauce from the excellent Artisan du Chocolat in London as I don't want to see just how bad for me it is, but they sadly don't have an outpost in Poitiers nor Talmont (they should really look into that) so I had to bite the bullet and make it myself.
First off, I'm sorry but it is as bad for you as you think it is, however, it's even more scrumptious than you think it will be so just enjoy it! My pan of caramel is currently cooling and every time I pass it I take a spoonful, thankfully there's a lot of it!

An Unbirthday Present
So, it is my birthday today - I'm 21! My family have a tradition of giving presents to the rest of the family on our birthdays (so on my mum's birthday my sister, dad and I each get a present as well), so today I thought I'd give you an unbirthday present. Although I cooked a healthier version of butter chicken and some delicious salted caramel fondants today, understandably (I hope), I didn't feel like writing a long post on my birthday, so instead I shall give you a piece of food trivia and a photo of me in my new hat, making the fondants. The hat has a huge pink pompom on it!! I love it!! I'll post the recipes soon - the butter chicken will appear as part of my Don't Say Never Trust A Skinny Cook series.
Trivia: Marc de Champagne isn't a type of champagne used in food preparation (like I thought it was) but rather a colourless brandy, made from the leftover grape skins, stalks and seeds from the first stage of champagne production, which are then distilled. If you don't believe me then you can google it!

Red Velvet Birthday Cake
One of my friends came over for supper last night, and, since it's her birthday today (happy birthday, Grace!) I decided to bake her a birthday cake. The only flaw in this plan was when I realised, five minutes before serving said cake, that we didn't have any matches in the flat to light the candles with! Cue a candle-less cake with an uninterrupted pattern.
I love to decorate the cakes I make but I often don't due to the amount of time and space it requires to do a proper job (halls of residence especially hindered my cake inspirations last year). However, I now have a lovely kitchen in my new flat with an orange KitchenAid mixer sitting in pride of place on the work surface; a fact that makes me keen to get out my toolbox and start decorating again.
My choice of cake for the occasion was a red velvet cake with cream cheese "frosting" (made from the Hummingbird Bakery recipe). Unusual ingredient of the day? White wine vinegar. Fortunately you don't taste that particular ingredient in the finished cake, it just helps the bicarbonate of soda to do its magic. To top the cake I used a curly stencil and filled it in with my new Callebaut cocoa powder (it smells so good!), which worked surprisingly well as only one bit of powder fell where it wasn't supposed to.
Grace was suitably impressed by the pretty pattern and white icing. Most importantly it tasted pretty good too!
